Kathy's Recipe of the Month-Roasted Beet Salad w/Goat Cheese Kathy Kerner
This easy and delicious recipe comes from a cooking show called Real Girl's Kitchen with Haylie Duff. Make homemade dressing too!
Ingredients:

5 Beets (yellow, golden or other varieties)

Olive oil
-
Sea salt
-
Goat cheese
-
3 cups Butter lettuce or Arugula

1/4 cup cracked hazelnuts
Ingredients/Directions for Dressing:

1/4 cup olive oil
-
1/4 cup hazel nut oil
-
1/4 cup sherry vinegar
-
1 teaspoon honey
-
Pinch of salt
-
Pinch of black pepper
Stir together.
Directions:
Remove greens, clean beets well, and cut the ends off. Put them in a pan, drizzle with olive oil, add pinch of sea salt, and bake uncovered at 400 degrees for 1 hour. (The cooking time may vary a little depending on the size of the beets). Check periodically to see if beets are tender.
After the beets are cooked, peel and cut them into quarters.
To serve: Put butter lettuce or arugula on a big salad platter. Place the beets on the greens and scatter 1/4 cup cracked hazelnuts on the top. Add dressing to salad- thinly drizze across. Break of chunks of goat cheese and scatter across the salad.
